Lemon Pepper Marinade

My husband specifically requested lemon pepper pork chops for dinner one night, so I threw together this marinade and boy was it a winner! We like to get the thick, boneless chops from Costco and grill them on the barbeque. I always marinate them first, to keep them nice and juicy. The flavors of this marinade paired well with the pork, but would go well with chicken or fish also. This recipe, as written, is perfect for about 4 lbs. of meat, but can easily be scaled up or down as needed.

Lemon Pepper Marinade

This marinade is bright, tangy, and peppery. It is perfect for marinating any cut of chicken or pork, creating the perfect main course that is tender, juicy, and flavorful.

Ingredients
  

  • ½ cup water
  • ½ cup lemon juice
  • 1 cup vegetable oil
  • 3 tbsp Dijon mustard
  • 2 tbsp Worcestershire sauce
  • 2 tbsp lemon pepper seasoning
  • 2 tsp garlic powder

Method
 

  1. Add all of the ingredients to a small mixing bowl and whisk to combine.
  2. Place your meat in a sealable container or freezer bag, then pour the marinade over it. Make sure it is coated on all sides by the marinade.
  3. Seal the container and place in the refrigerator. Let marinate for at least 2 hours, but overnight is best to allow the marinade to penetrate the meat.
  4. Cook the marinated meat according to how it should be cooked. This will vary by type and cut.
